  • ½ cup cooked and cooled quinoa
  • ¼ cup chickpeas
  • 2 cups spring mix
  • 1 cooked beet sliced; sprinkle with on plan sweetener
  • 1 Tbsp fermented kraut
  • 1 can SafeCatch Tuna or canned Wild Salmon drained & separated with a fork
  • 1 tsp extra virgin olive oil
  • 1 tsp rice vinegar
  • 1 doonk stevia
  • Fresh lemon squeeze
  • Salt & Pepper to taste


  • Place the spring mix in a large salad bowl.
  • Top with the quinoa and chickpeas in separate ‘piles’ around the outer edge.
  • Add the beet and kraut in separate ‘piles’ around the outer edge.
  • Dump your protein in the middle.
  • Combine the last 5 ingredients in a small bowl, then drizzle all over your power bowl.
  • Enjoy as is OR add ½ an avocado for an amazing light crossover!
