  • 12 eggs beaten
  • 6 slices of organic uncured ham, chopped
  • 1 can Rotel drained
  • 2 Tbsp chopped purple onions bought pre-chopped
  • Salt and Pepper to taste


  • Mix everything in a big bowl.
  • Use a 1/3 cup measuring scoop to pour mix into muffin wells. (I use a silicone pan - no liners or spray needed).
  • Bake for 20 mins at 350 degrees.


Chopped turkey or shredded chicken could be used instead of ham.
Make 18 muffins. I like to enjoy 3 of these alongside some non-starchy veggies for an easy breakfast.
