Ingredients

  • 2 cups quinoa cooked and cooled
  • 1 cup riced cauliflower cooked and cooled
  • 2 cups chicken cooked, shredded, and cooled
  • 1 medium cucumber chopped small
  • 1 medium red pepper seeded and chopped small
  • 2 green onions chopped small
  • 2 cloves minced fresh garlic
  • 4 tsp extra virgin olive oil
  • 2 Tbsp lemon juice bottled or fresh squeezed
  • 1/2 tsp each salt and pepper
  • 3 tsp each dried parsley and basil

Instructions

  • Combine all ingredients in a large bowl. Chill overnight or for at least 4 hours. Serving size - 1 & 1/2 cups
